Promoting sustainable food consumption in higher education: role of the RUS network in transforming Italian universities

Sustainability is a critical focus in global policies, particularly in food systems, addressing challenges like food security, resource management, and waste reduction in line with the United Nations’ Sustainable Development Goals (SDGs). The Italian University Network for Sustainable Development (RUS) promotes sustainability through initiatives like the Food Working Group, which emphasizes sustainable food practices in universities. Activities include managing food acquisition, waste, and educational initiatives. This study analyzes Italian universities to identify best practices in food sustainability and evaluates their role in raising sustainable consumption, highlighting their impact on local and global sustainability initiatives.
